Aunt Sue's Salted Caramel Pecan Brittle

This brittle is pure perfection! So let's get into the Salted Caramel  part of it. This brittle was a pure accident.  The Head Brittle Maker was doing her recipe by memory and not the written down version.  Don't do this!  Look at your notes!  The Head Brittle Maker doubled the salt involved.  It wasn't quite right but it was delicious!  The Head Brittle Maker went with it and played with it.  She found by actually increasing the salt more the brittle was so different yet so delicious. So we went with it.  However, online our Salted Caramel Brittle wasn't selling as well as we wanted it to. Sweet Liberty Candy Company was doing a purge of items and while we LOVED this item, it was not a big seller.  In stepped Aunt Sue.  This brittle was her absolute FAVORITE brittle.  She was the ride and die person for it.  We absolutely love Aunt Sue so we kept it.  So very happy we did!  We realized all the world needed was a better descriptor! In person the brittle was our most popular.  We just didn't understand how to talk about it.  This is our regular brittle taken to 11!  The addition of a bit of extra salt is all it needed to absolutely EXPLODE in our palate!
